Giblet Gravy

Ingredients:

3 Cups water

giblets

4 Tablespoons drippings from cooking turkey

3 Tablespoons flour

salt

pepper


Directions: Start preparing this gravy about an hour before the turkey is done. This will allow the gravy and turkey to be done at about the same time.

Bring water to a boil, and add giblets from the turkey. Reduce heat to a simmer and cook for about 45 minutes, or until giblets are fully cooked. Set aside.

Skim 4 Tablespoons of fat from the roasting pan that the turkey is cooking in. Heat in a skillet over medium heat. Add flour, and stir until it browns. Add the water that the giblets were cooked in, and stir until smooth and thickened.

Finely chop giblets, and add to gravy. Stason with salt & pepper to taste. Serve in a gravy boat.

Homemade Whipped Topping

Ingredients:

1 Cup whipping cream

1 teaspoon vanilla

1/3 Cup powdered sugar


     Directions:     Beat all ingredients in a small bowl with an electric mixer until soft peaks form.  Cover and refrigerate until ready to use. 

Key Lime Pie

Ingredients:

1 recipe bacic pie crust

3 egg yolks

1 (14 oz.) can sweetened condensed milk

3 Tablespoons water

1/2 Cup key lime juice

Whipped topping


     Directions:     Line unbaked pie crust with foil and bake at 450 degrees for 8 minutes.  Allow crust to cool compleetely. 

Meanwhile, beat egg yolks, and gradually stir in sweetened condensed milk.  Stir until well blended.  Add lime juice, water, and a few drops of green food coloring (optionial).  Stir until mixture thickens.  Pour into baked pie shell.  Bake at 350 degrees for 25 minutes. 

Cool on wire rack for 1 hour.  Refrigerate until ready to serve.  Top with whipped topping. 

Sundae Pie

Ingredients:

1 recipe chocolate cookie curst

1 Cup mini chocolate chips

1 Cup peanuts, coarsly ground

1/2 Cup peanut butter

4 Cups vanilla ice cream, softened

whipped topping

chocolate syrup


     Directions:     Prepare chocolate pie crust.  Fold chocolate chips, peanuts, chocolate syrup, and peanutbutter into ice cream.  Spread in pie crust.  Top with whipped topping, and freeze until ready to serve. 

Chocolate Cookie Pie Crust

Ingredients:

about 25 Oreo cookies

5 Tablespoons butter, melted


     Directions:     Scrape frosting from cookies, and mash them to make 1 1/2 Cups of crumbs.  Mix with melted butter.  Press into a 9 inch pie pan and refrigerate for 1 hour. 

Chocolate Silk Pie

Ingredients:


1 recipe basic pie crust

1 Cup semi sweet chocolate chips

1/2 Cup butter

1/2 teaspoon salt

1 Cup sugar

1 Tablespoon cocoa powder

3 eggs

2/3 Cup evaporated milk

1 teaspoon vanilla


     Directions:     In a sauce pan, over medium heat, melt butter and chocolate chips.  Mix in salt, sugar, and cocoa powder.  Wisk eggs with milk and vanilla until well blended.  Add to chocolate mixture and mix well.  Pour into unbaked pie shell.  Bake at 350 degrees for 30 minutes.  Cool compleetly, and refrigerate until time to serve.  Garnish with whipped topping and chocolate shavings. 

Vanilla Cream Pie

Ingredients:

1 recipe basic pie crust, baked

1 Cup sugar

1/3 Cup flour

1/4 teaspoon salt

3 Cups milk

4 egg yolks

3 Tablespoons butter

2 teaspoons vanilla

     Directions:     Combine flour, sugar, and salt in a sauce pan.  Gradually stir in milk.  Cook and stir over medium heat until thick and bubbly.  Remove from heat.  Slightly beat egg yolks, and add to 1 Cup cooked mixture.  Pour back into pan, and bring to a slow boil.  Cook and stir for 2 minutes.  Remive from heat.  Stir in vanilla and stir into baked pie shell.  Cover with plastic wrap to prevent a skin from forming on the pudding.  Cool compleetly.  Refrigerate until ready to serve. 


VARIATION #1

Banana Cream Pie

Slice 3 medium bananas into bottom of baked pie shell.  Pour hot pudding over bananas and continue as recipe directs. 


VARIATION #2

Chocolate Cream Pie

Increase sugar to 1 1/4 Cups, and  combine 1/2 Cup cocoa powder with sugar, flour, and salt.  Continue as directed. 


VARIATION #3

Coconut Cream Pie

Add 1 Cup flaked coconut along with vanilla.  Continue as directed.
